I don't want anyone having a natural fitness of 9 or whatever. It makes them injury prone, makes them recover slowly, struggle to get fit for games and suffers selection and in the long run, it has negative implications on physical attributes. Take a look at what happened to Weeman who had 9 for natural fitness. Kept getting injured and the physical attributes plummeted. No amount of potential can fix that.

Yeah it's not really relevant. You can't add any of that on the editor. It was there initially as a guide. Some people might know they want to be B2B but not know the attributes associated with it. And that guide was there to tell them.

Player types are something that happens when you're training at a club. You see how competent a central mid is at being an AP, B2B, DLP and then you can train them as a specific player type. What that does is just boosts the attributes related to it. So yeah, it's something your manager chooses for you at the end of the day but you can convince him that you're best fitted for a B2B for example by having the relevant skills. Then he'll put you on B2B training.
